This year's dinner is presented by the Hispanic community to express their support and gratitude to Immaculata Catholic School.
The auction volunteers are confident that you'll have some of the best Mexican food you've ever tasted!
Below are some of the items planned for the dinner. The final menu will be based upon availability from food suppliers.
Traditional corn based appetizers, served in mini size so you can try two or three and leave space for your main course. Options include:
Chicken and Guajillo Chile Sauce Tamale, baked the Oaxacan style in banana leaves.
Gorditas, a pan-fried tortilla topped with black beans, lettuce and fresh cheese (meatless option).
Flautas, a softly pan-fried tortilla full with mash potatoes topped with sour cream and fresh cheese (meatless option).
The main courses include several options (including two meatless options) designed for you to try the authentic way food is prepared south of the border.
Three popular tacos found in different parts of Mexico, served with fresh handmade corn tortilla. The choices include:
Cochinita: Shredded pork in a special sauce topped with carrots, onions, and pepper.
Barbacoa: Shredded beef in a special sauce topped with onions, cilantro, lime juice, and green salsa.
Chicken: Shredded chicken in special sauce topped with lettuce and red salsa.
Poblano Chile Peppers stuffed with fresh cheese, covered in beaten eggs and pan-fried. White rice on the side.
Cauliflower covered in beaten eggs and pan-fried. Red rice on the side.
A traditional salad to be on the side of your main course, made with a mix of shredded green/white and purple cabbage, shredded carrots, and a dressing of lime juice and salt.
The griddles meatless menu, "Flautas de Zanahorias."
Traditionally a light meal, main dish, or even street food, these "Carrots Flutes" are sure to please you. Softly deep fried, and topped with various shredded vegetables such as lettuce, carrots, onions, guacamole, and a little more.
Tres Leches Cake: Sponge yellow cade soaked in a sweet sauce of milk and heavy cream
Flan: Mexican custard
Apple Salad: Fresh slices of apple and nuts soaked in a sweet sauce of milk and heavy cream
Mosaic Jello: Colorful jello mixed in evaporated and sweetened milk
Cold drinks made from fresh fruits, water, and sugar, also called "Aguas Frescas," is the preferred option to accompany the menu.
Beer and wine will also be available.
